1 1/2 c. dry quinoa
3 c. Chicken broth
1 Tbsp Chili powder
1 1/2 tsp Ground cumin
1/4 tsp Garlic powder
Salt and freshly ground black pepper
3 Chicken breasts OR 1-2 packages of Southwestern Perdue Shortcuts
1 1/2 Tbsp Olive oil
1 Can of corn OR 1 package of frozen corn
1 Can of black beans
Mexican blend cheese
Avocados, guacamole and sour cream optional for topping

In a medium saucepan stir together quinoa and chicken broth. Bring to a boil over medium-high heat then cover, reduce heat to medium-low and allow to simmer for 15 minutes or until broth has been absorbed. Remove from heat and let rest 5 minutes.
In a small bowl whisk together chili powder, cumin, garlic powder and 3/4 tsp salt and 1/4 tsp pepper. IF USING CHICKEN BREASTS: Pound chicken breasts to even out their thickness using the flat side of meat mallet. Brush both sides with the 1 1/2 tbsp olive oil then season both sides of chicken with the chili powder mixture (use all of it). Cook on medium-high heat until all chicken is cooked through. IF USING PERDUE SHORTCUTS: Cut up chicken into bite sized cubes and cook on medium-high heat for 5 minutes and then remove from heat.
Warm up corn and beans either in a microwave for a few minutes or on the stove top for a few minutes. Be sure to rinse out both for excess liquids.
To assemble burrito bowls, divide quinoa among serving bowls. Top with chicken, corn, black beans, cheese and your topping of choice.

If the quinoa has not been pre-rinsed I usually use a strainer and run water over it. Can also substitute quinoa with rice.
