Cider Whiskey Brine Recipe

½ gal. apple cider
½ c. packed dark brown sugar
½ c. Diamond Crystal kosher salt
1 tsp. whole allspice berries
¾ tsp. whole black peppercorns
½ tsp. whole cloves
6 2" strips of orange rind
2 rosemary sprigs
2 bay leaves
4 qts. chicken stock
1 c. bourbon or whiskey
14 - 16 lb. whole turkey or 2 to 3 breasts

1. Heat all ingredients except the turkey in a large pot until sugar and salt have dissolved. Cool to room temperature. Can be made one day ahead and stored in fridge.
2. Place turkey in a large pot or heavy duty trash bag. Cover with brine solution. If using trash bag, squeeze out all the air and tie tightly. Place inside another heavy duty trash bag and tie tightly.
3. Refridgerate turkey for 24 hours, turning at 12 hours. If you don't have fridge space, place turkey in chest cooler and pack with ice.
4. About an hour before you're ready to roast the turkey, remove it from brine. Rinse the turkey and pat dry, inside and out.

I call this my "luxury" brine since the brine solution costs about as much as the turkey! But it is wonderful.
