2½ pounds red potatoes,
15 slices smoked bacon
1 cup diced red onion
½ cup packed brown sugar
2 TBSP cider vinegar
¾ cup olive oil
Kosher salt and ground black pepper to taste¾

Directions:
1. Boil potatoes until tender when tested with a knife.

2. While potatoes are boiling, fry the bacon until crisp. Remove bacon and drain most of the fat. Leave 2 TBSP of drippings and fat in the skillet. Sauté the onion in the skillet, then remove from pan. Crumble the bacon, should be about 1 cup of bacon and a little extra for garnish.

3. Combine the brown sugar and vinegar in a large salad bowl. Whisk to blend and dissolve the sugar, then slowly add the oil while continuing to whisk. Season with salt and pepper. Add the onion and bacon to dressing. Toss the potatoes with the dressing. Serve at room temperature or slightly warm with bacon garnished on top.
