3 Tbsp vegetable oil
1½ lbs boneless pork loin chops, cut into bite size pieces
1½ cups instant brown rice uncooked
1 (10.5 oz) can cream of chicken coup
1 (15 oz) can black beans, rinsed and drained
1 (14.5 oz) can diced tomatoes
2 (4 oz) cans diced green chilies
3 Tbsp chunky salsa
¼ C water
2 Tbsp ground cumin
1 C shredded cheddar cheese

Directions:
Directions:
Heat oil in a large pan or stock pot over medium-high heat. Add pork and saute until brown. Drain off grease.

Add rice, soup, beans, tomatoes, green chilies, salsa, and water. Season with cumin. Stir to blend, bring to a boil. Simmer over medium heat for about 15 minutes or until rice is tender.

When cooked, put in a 9x13 baking dish and sprinkle cheese on top. Bake at 400º for 10 to 15 minutes until cheese is melted.
