1 1/2 lb asparagus
1/2 lb mushrooms
1 med carrot
3 green onions
1 medium zucchini
4 whole chicken breasts
2 Tbsp butter
1 Tbsp cornstarch
1/4 tsp cracked pepper
salt
2 c milk
1 chicken bouillon cube
1/4 c Parmesan
oil
1.2 c frozen peas
16 oz thin spaghetti

Directions:
*Cut asparagus in 2" bits. Thin slice mushrooms & carrots. Cut zucchini in 1/4" slices. Chop onion 1" pieces. Cut chicken in 1 1/2" pieces.
*In 2 qt saucepan, over medium heat, melt butter. Stir in flour, pepper & 1/4 tsp salt until blended. Gradually stir in milk. Add bouillon adn cook, stirring constantly until slightly thickened and smooth. Remove from heat. Stir in cheese and keep warm.
*In an 8 qt pot, medium-high heat, in 1/4 c oil cook asparagus, mushrooms, carrot, zucchini, onion and 3/4 tsp salt, until tender-crisp, about 5 minutes, stirring frequently. With slotted spoon, remove veggies and place in bowl.
*In same pot, medium-high heat, 2 Tbsp oil, cook chicken and 1 tsp salt until chicken is tender, 5 minutes, stirring frequently.
*Return veggies to pot. Add peas and cook until heated through, about 5 minutes, stirring occasionally.
*Meanwhile, in a 6 qt pan, cook spaghetti. Drain. Add to the other pot. Mix well.
