2 lbs. beans - pinto, small red, navy, white, or a mixture; anything but black
4 c. beef broth
4 large bay leaves
4 sprigs fresh thyme or 1 T. dried
2 large onions chopped
1 T. minced garlic
1 lb. bacon, cut into ¾" pieces, fried and drained
1 c. brown sugar
1 c. ketchup
½ T. ground mustard
1 T. garlic powder
½ tsp. ground cloves
¾ tsp. ground nutmeg
1 T. Worchestershire sauce
½ c. bourbon
dash of Tobasco, or to taste

1. Pick over beans. Place in a large bowl and cover with at least 3" of water. Soak for 8-10 hours or overnight. Drain and rinse and drain again.
2. Place beans, beef broth, bay leaves, thyme, onion, and minced garlic in a large crock pot and cook on low for 10 hours or overnight.
3. Heat oven to 350 º.
4. While oven is heating, place remaining ingredients in a large Dutch oven, mix well and heat over medium to a gentle simmer. Add beans from crock pot to the Dutch oven. You want the beans and sauce mixture to be a little "soupy". Add liquid from the crock pot if necessary.
5. Cover Dutch oven and place in oven. Bake for 1 hour. Remove lid and continue to bake until top gets a crust, about another hour.

Better than the canned baked beans I grew up on. Well worth the time invested. Either the soaking segment or the crockpot segment can be done overnight depending on when you want the beans ready. Just plan ahead for when you want to serve these. I tend to soak overnight then put the beans in the crock pot in the early morning. That way they are done by dinner. This recipe freezes well.
