Red beans
Cooking oil
5 cloves garlic
Green onions, chopped
Coconut milk
salt, pepper



Directions:
Directions:
Boil red beans in water with a spoonful of cooking oil.
Put in 5 cloves and a clove of garlic.
When beans are cooked tender, set aside.
In a large pot, sauté chopped green onions and garlic in vegetable oil.
Add beans to pot without the water.
stir and let it cook for five minutes. Add the bean water to pot. Add salt and pepper to taste.
Add ˝ can of coconut milk.
If the liquid is low, add water.
When the liquid is boiling, add the rice and stir to keep it from sticking to the bottom of pot.
The liquid should cover the rice about 1/2 inch.
When the liquid almost evaporates, lower heat to low.
Cover tightly for 20 minutes. The steam will finish the cooking.
