1 cup butter
1 cup powdered sugar
¼ t salt
1 T grated lemon peel
2 ½ T lemon juice
Yellow food coloring
2 ½ cups flour
1 egg white
1 t water
Yellow sugar

Directions:
Directions:
Cream butter and sugar and blend in salt, peel and juice. Add enough food coloring to tint dough to yellow color. Stir in flour. Roll ¼ inch thick and cut with 2 inch circle. Cut in half. Brush outside edge of “lemon slice” with mixture of egg white and water and dip in yellow sugar. Bake on parchment paper lined sheets. Sprinkle lightly with sugar and bake at 375º for 10 minutes.
