¾ cup butter
1 cup sugar
1 egg
1 T grated orange peel
1 t vanilla
2 cups flour
¼ c cornstarch
½ c pistachios, toasted & finely chopped
2 ¼ cups powdered sugar
¼ cup orange juice
1 T melted butter
Additional toasted & chopped pistachios for sprinkling

Directions:
Directions:
Cream butter and sugar. Beat in egg, orange peel and vanilla. Whisk flour and corn starch together & gradually stir into creamed mixture. Divide in half and roll each into 7 inch logs. Wrap tightly in plastic and refrigerate overnight or freeze 30 minutes. Allow to set at room temperature for 10-15 minutes to soften outer edge, for nuts to stick. Roll in pistachios and slice into ¼ inch slices. Bake at 350º for 6-8 minutes until bottom is light brown. Cool completely. Make frosting by combining ingredients until smooth. Frost lightly and sprinkle with additional nuts.
