1 1/2 lb. fresh asparagus
1/3 cup cider vinegar
3/4 c. vegetable oil
1/2 tsp. salt
1/8th tsp. pepper
1 T finely chopped pimentos


Directions:
Directions:
Steam asparagus or cook in boiling water till tender. Rinse under cool water or in an ice bath to stop cooking process. Drain and place in a shallow dish. Combine vinegar, oil, salt and pepper and pour over asparagus. Cover and refrigerate. When ready to serve, drain and garnish with pimento. Can be served cold or at room temperature.

This is a standard recipe for us for Thanksgiving. Since it can be served at room temperature its easy and something green always looks good.
