1 lb chicken cut in bite sized pieces
2 tsp cornstarch
1/2 tsp salt
2 Tbsp cornstarch
1/4 c water
1/2 c carrots, peeled & sliced 1/4"
1/2 c green pepper in 1" pieces
1/2 c pineapple chunks or tidbits, drained
1/2 c Splenda or sugar
1/4 c ketsup
1 tsp soy sauce
1/3 c cider vinegar

Directions:
Directions:
Place chicken, cornstarch and salt in a zipper bag and shake.
Mix 2 Tbsp cornstarch and water and set aside.
Put carrots in a small sauce pan with 1/2 c water. Bring to a boil and boil 1 minute.
Add pepper. Boil 1 more minute. Drain and rinse thoroughly with cold water. Add pineapple.
In small pan mix Splenda, ketsup, soy sauce and vinegar. Bring to a simmer. Add cornstarch.
Cook, stirring well until clear.
Heat oil in fry pan and stir fry chicken. Mix everything and serve with rice.
