Ingredients:  
1 1/2 c sugar
6 Tbsp cornstarch
3 egg yolks, beaten
Grated rind of 1 lemon
6 Tbsp lemon juice
1/4 tsp salt
2 1/4 c boiling water
1 1/2 Tbsp butter
Meringue:
3 egg whites
3 Tbsp cold water
1 tsp baking powder
6 Tbsp sugar
Pinch of salt

Directions:
Directions:
In saucepan, combine sugar, cornstarch and salt. Add egg yolks. Then add lemon rind, juice, and boiling water. Mix well.
Cook, stirring constantly, over low heat until thick and clear.
Add butter. Cool slightly. Put in baked pie shell. Top with meringue.
Meringue:
In a very clean bowl, beat room temperature whites, water, baking powder, salt. Beat until stiff. Add sugar gradually. Pile on pie. Bake 450º a few minutes, watching carefully.
