2 c milk, scalded
1/4 c sugar
2 Tbsp cornstarch
1/4 tsp salt
3 egg yolks, beaten
1 tsp vanilla
3 egg whites
1/4 tsp cream of tarter
3/4 c sugar
Graham cracker crust, preferably with a dash of cinnamon and extra sugar
Optional bananas

Directions:
Directions:
In a double boiler, scald milk.
Mix cornstarch, sugar and salt, well. Add to scalded milk slowly, stirring constantly.
Cook over hot water until mixture thickens. Then cover and cook 10 minutes.
Beat egg yolks. Add some of the hot mixture to them, stirring constantly. Then add this mix to the hot mixture.
Cook 2 minutes, stirring constantly. Cool. Add vanilla, bananas if using and pour into pie crust.
In large very clean bowl, beat room temp egg whites and cream of tartar with electric mixer until foamy.
Gradually add sugar, beating until mixture forms stiff peaks. Put on pie. Broil about 10 minutes, watching carefully.

This, with bananas, was Uncle Mark's birthday "cake" every year.
