3 Tb butter, room temperature
10 slices white or sourdough bread, crusts removed
1 lb mild cheddar cheese, shredded (2-3 cups)
5 eggs, beaten
3 cups milk
¼ tsp salt
3 tsp prepared Dijon mustard
1 (4 oz) can diced green chilis

Directions:
Directions:
Butter bread on both sides and cut into ½ inch cubes. Turn half of bread cubes and then half of cheese into 9X12 baking dish.

Add remaining bread cubes and cheese.

Beat together eggs, milk, salt, mustard, and chilis until well blended. Pour over cheese and bread in dish. Cover and refrigerate overnight.

Preheat oven 350 degrees. Remove strata from refrigerator and uncover. Bake for 45 minutes, or until light and fluffy. Serve immediately.

Can improvise by adding diced cooked chicken, crumbled cooked sausage, or a can of drained corn kernels.
