Homemade chicken broth
celery
onions
carrots
head of escarole
1 cup ditalini
4 eggs
3-4 tsp parmesan cheese

small meatballs
ground meat
bread crumbs
garlic powder
onion powder
small egg

Directions:
Directions:
Make a homemade chicken broth. Add carrots, celery and onions to taste.

Make tiny meatballs. Place on a baking sheet and brown in the oven. Drop meatballs in the chicken broth.

Remove core from head of escarole. Wash and cut up in small pieces. Ad to soup. Add about 1 cup of ditalini pasta. Let simmer.

Bring soup to a boil. Beat 4 eggs with 3-4 tbsp of parmesan cheese. Drizzle into boiling soup. Do not stir. Cover. When thick like an omlette, remove from heat and serve.
