French Onion Stuffed Chicken Recipe

2 tbsp butter
4 onions thinly sliced
3 tsp thyme
2 tbsp white wine or balsamic vinegar
2 clove minced garlic
1/2 cup beef broth
1 tbsp olive oil
4 chicken breast
2 tsp garlic powder
1 cup shredded mozzarella (or gruyere)
4 tbsp grated parmesan

Preheat to 400f and grease 9x12 dish

Melt butter, add onions, 1/2 of thyme and salt and pepper. Cook on medium high until soft (5-8min) then decrease heat to medium and cook until caramelized, stirring occasionally (15min). Pour in 1/4c broth if pan gets dry. Pour in wine/vinegar to deglaze, cook until thick. Stir in garlic cloves and remove from heat.

Cut chicken in half horizontally to create a pocket. Season chicken with salt, pepper, garlic powder, and thyme. Add 1-2 tbsp of onions into each breast and fill the rest of the pocket with cheese. Seal with toothpicks.

Put the remaining onions in baking dish with 1/4 cup stock.

In a skillet over medoum high heat, heat oil and sear each side of the chicken until brown (4min).

Place chicken in baking dish, spooning some of the sauce over the chicken, top with remaining thyme and bake 15-20min until fully cooked.
