4 tbsp butter
1 cup brown sugar
1 small can sliced pineapple
4 egg yolks beaten
4 egg whites beaten to stiff peaks, divided
1 cup sugar, divided
1 cup flour
2 tsp baking powder
1/2 tsp vanilla

Directions:
Directions:
Melt 4 tablespoons of butter in a frying pan. Add 1 cup of brown sugar and sliced pineapple with some juice. Set aside.

Beat 4 egg yolks. Add 1/2 cup of sugar. Fold in 1/2 stiffly beaten egg whites. Add another 1/2 cup of sugar, flour, baking powder, vanilla and rest of egg whites. Mix gently.

Pour over pineapple and brown sugar mixture starting from the outside into the middle. Bake at 350º until cake tester comes out dry and cake bounces back when touched in the center.

Run a knife around the sides and turn out on a plate right away.
