500 g hot Italian sausage
500 g mild Italian sausage
2.5 cups celery (4-5 stalks), sliced
2.5 cups carrots, sliced
1 red pepper
2 small or 1 large onion, chopped
1 can pinto beans
28 oz can of diced tomatoes
1 can tomato sauce
1.5 - 2 liters chicken stock
heaping teaspoon dried oregano
heaping teaspoon dried basil
half teaspoon garlic powder or granulated
heaping teaspoon sea salt

Directions:
Directions:
Cook the sausage (either in oven or in frypan).

While the sausage is cooking, start the rest of the soup. In a large pot, combine everything else. Heat over medium high heat until it starts to boil. Reduce heat to low and simmer for 30 - 40 minutes.

When sausage is finished cooking, remove to cutting board and slice into bite sized rounds. Add the sausage to the soup cooking in the pot. Adjust seasonings to taste and keep warm until serving.
