1 2/3 c. flour
1 tsp. baking soda
1/4 tsp. ground cinnamon
1/2 tsp. salt
1 c. plus 2 Tbsp. sugar
2 eggs
1/2 c. oil
3 1/2 ripe bananas, mashed
2 Tbsp. sour cream
1 tsp. vanilla extract
2/3 c. toasted nut of choice (optional)

Directions:
Directions:
- Preheat oven to 350º. Spray loaf pan or muffin cups with cooking spray.
- Mix together flour, baking soda, cinnamon, and salt.
- Beat sugar and eggs until light and fluffy. Drizzle in oil. Add mashed bananas, sour cream, and vanilla.
- Fold in dry ingredients and nuts. Pour into loaf pan and bake for about 45 minutes to 1 hour (bake less time for muffins).
