3 c. flour
2 c. sugar
1 c. dried cherries
3/4 c. chopped almonds
1/4 c. flax seed
1 tsp. ground cinnamon
1 tsp. baking soda
1 1/3 c. plain yogurt
3/4 c. vegetable oil
3 eggs, beaten
2 tsp. vanilla extract

- Preheat oven to 350º. Spray loaf pans with cooking spray.
- In a large bowl, combine flour, sugar, cherries, almonds, flax seed, cinnamon, and baking soda.
- In a medium bowl, combine yogurt, oil, eggs, and vanilla; beat well.
- Add yogurt mixture to flour mixture, stirring just until dry ingredients are moistened.
- Spoon batter into prepared pans. Bake 45 minutes or until golden brown, covering loosely with aluminum foil to prevent excessive browning. Bake 15-20 minutes longer or until toothpick comes out clean.
- Cool in pans 10 minutes. Remove from pans and cool completely.
