Ingredients: potatoes, sliced onions, sliced carrots, sliced green beans, in pieces any other vegetables season salt pepper foil butter

Directions: |
Directions:1. Cut lengths of foil (I cut 2 longer strips and crisscross them) to create the pocket.
2. Butter the center area of the foil.
3. Arrange the vegetables in layers: potatoes, carrots, green beans, and onions on top.
4. Sprinkle seasonings over the vegetables(could add between layers also, if desired). Add a few pats of butter around the top.
5. Bring up the edges of the foil; fold them together to seal the vegetables inside the pockets. They should be completely enclosed. Place on a baking sheet.
6. Cook on 350º about an hour, until vegetables are cooked and softened.
*** These are very hot. Be careful opening the pockets.
*** I often add a hamburger patty, or some chicken on top of the vegetables. |

Notes: We were doing a unit study on the Box Car children. We had been at the park all day, leaning how to build a fire, doing some "hiking" and talking about what it must have been like for them. When we returned home, we needed to start dinner. I came up with this idea. Mary and Bobby enjoyed it so much, it remained a staple in our home. The beauty of this recipe, is that you can easily create it for each personal preference. We just marked the outside of the pockets so we knew which was which. I play with the flavors here also. Feel free to add other seasonings, and vegetables.
