1 16 oz package chopped spinach, thawed, drained and squeezed dry
4 slightly beaten eggs
6 oz crumbled feta cheese
5 oz crumbled Gorgonzola cheese
½ C shredded cheddar cheese
½ C grated Parmesan cheese
1 C (8 oz) cottage cheese
½ C chopped red bell pepper
1 C chopped green onions
1 tsp salt
¼ tsp pepper
1 tsp dried tarragon (1 T chopped fresh)

1. Preheat oven to 350º.

2. Combine all ingredients in a large bowl. Spoon mixture into a quiche dish prepared with nonstick cooking spray.
*Could put in the freezer at this point. Just cover with heavy duty aluminum foil.

3. Bake for 60 minutes, uncovered, or until set and lightly browned on top. Remove from oven and let set for 10 minutes prior to serving. *If cooking a frozen quiche: thaw first.

***I bake this in individual custard cups. Bake them about 40-45 minutes.

I came across this recipe in a "Once a Month Cooking" cookbook. I really enjoyed this recipe. I love the mix of flavors. When I visited mom, I made it for her. She liked it so much, I started making it for her on all my visits. I would make them in individual portions, and freeze them. I would remove them from the dishes, after baking and cooling. I'd wrap them in wax paper and put them in a zip lock bag. She could pull them out and reheat them when she was ready for them. I take these to work for my breakfast. Feel free to add or subtract ingredients. Sometimes I add kale to make them healthier....
