½ pound Thick-cut Bacon, diced
½ pound Smokehouse Ham, diced
¼ pound Country Ham, diced
1 cup Corn
2 cups Tomato Fillets, or 1 (14 ounce) can Tomato Bits, drained
1 medium Onion, finely diced
1 cup Parsley, chopped
1 Serrano Pepper, seeded and diced
4 cloves Garlic, minced
½ teaspoon Paprika
½ teaspoon Coriander
½ teaspoon Cayenne Pepper
4 tablespoons Butter
¼ cup Flour
4 cups Vegetable Stock
Grands Biscuits (frozen)

Directions:
Directions:
Cook bacon with onion and garlic in a large skillet or soup pot. Fold in the ham and cook for 3 minutes.
Add butter, parsley, serrano pepper, garlic, and spices. Once the butter melts, dust the flour evenly over the skillet ingredients. Fold together until the butter is incorporated into a thick roux.
Add in corn and tomato.
Slowly whisk in vegetable stock until thickened and gravy starts to form.
Keep warm over low heat.

Serve over biscuits. Add fried eggs on top for a treat!
