3 cups shredded potatoes
⅓ c butter, melted
1 cup cooked ham, diced
1 cup shredded cheddar cheese
¼ cup diced green peppers
2 eggs
½ cup milk
½ t salt
¼ t pepper

Directions:
Directions:
Press potatoes between paper towels to remove moisture. Press into bottom and up sides of an ungreased 9 inch pie pan. Drizzle with melted butter. Bake at 425º for 25 minutes. Remove from oven and spread ham, cheese and green pepper in crust. Beat eggs, milk and spices. Pour into pie pan and bake at 350º for 25-30 minutes or until knife inserted in center comes out clean. Let rest 10 minutes before serving. Diced onions can be added as well.
