2 Tbsp unsalted butter
¼ cup onion, grated (use big holes of cheese grater and prepare to cry!)
1 tsp minced fresh oregano or 1/4 tsp dried
½ tsp table salt
2 garlic cloves, minced
28 oz can crushed tomatoes
¼ tsp sugar
2 Tbsp chopped fresh basil
1 Tbsp extra virgin olive oil

Directions:
Directions:
Melt butter in medium saucepan over medium heat. Add onion, oregano, and 1/2 teaspoon salt and cook, stirring occasionally, until onion is softened and lightly browned, 5 to 7 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Stir in tomatoes and sugar, bring to simmer, and cook until slightly thickened, about 10 minutes. Off heat, stir in basil and oil and season with salt and pepper to taste.

This is my go-to tomato sauce because it's quick and has a lot of flavor. I use it as a pasta sauce, pizza sauce, and I even use it as an appetizer (see the "goat cheese thing").
