2 tablespoons butter
1 onion, chopped
1-2 stalks celery, chopped
1-2 carrots, chopped
4 tablespoons flour
4 cups chicken or turkey stock
2 potatoes, peeled and diced
2 cups shredded turkey
1/2 cup frozen peas or corn
1 t dried parsley
1 t dried basil
1/2 t poultry seasoning or sage
Salt and pepper to taste

1 prepared pie crust
1 egg, lightly beaten with 1-2 T of milk added for the egg wash

Directions:

- Preheat oven to 350 º F.
- Melt butter in saucepan and cook chopped onion,celery and carrots until tender.
- Stir in flour and cook for 2 minutes.
- Add chicken stock and bring to a simmer.
- Add potatoes and simmer until tender.
- Stir in turkey, parsley and peas/corn.
- Pour mixture into casserole dish.
- Top with pie crust and brush with an egg wash, or top with biscuit dough
- Bake for 30 minutes until crust is golden.

You can use Pie crust (recipe in the dessert chapter) or puff pastry or biscuit dough (recipe in the bread chapter). No need to brush with the egg for the puff pastry or the biscuit dough. You can also use chicken instead of turkey. Biscuit dough is our favourite.
