1 cup sugar
1 cup shortening
1 egg (unbeaten)
4 cups peeled and grated apples (about 5 small apples)
1/2 cup chopped nuts
1 1/4 cups sifted flour
1 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp lemon extract
1/2 cup maraschino cherries (cut in 1/8 for garnish)

Sauce:
4 T sugar
2 cups water
1/2 cup sugar
4 T butter
3 T cornstarch
1/4 cup water
1 1/2 tsp vanilla or
1 tsp vanilla and
1 tsp rum extract

Directions:
Directions:
Combine sugar and shortening and cream well. Add egg and beat well. Add grated apples and lemon extract, then add dry ingredients and mix well. Fold in chopped nuts. Place in well-greased pan and bake for 35 minutes at 375º. Garnish with cherries. When baking in glass, lover temperature 25º. Serve hot with See-Thru Sauce.

Sauce:
Brown 4 T sugar in a sauce pan and add 2 cups water, 1/2 cup sugar, and butter. Bring to a boil and add cornstarch moistened in 1/4 cup water. Stir continuously, and cook one minute. Remove from heat and add flavoring; serve hot.
