Mom's Meatloaf Recipe

1 lb ground beef
1 T poultry seasoning
1 egg
salt and pepper. to taste
2 small onions, finely chopped
1 can diced tomatoes, drained, but save the juice
1 green pepper, finely chopped
¾ C bread crumbs, or oatmeal

3 - 4 slices of bacon

Directions:

1. Mix together all ingredients in a casserole dish. Set aside the tomato juice in a small saucepan for the tomato gravy.

2. Top meatloaf with slices of bacon.

3. Bake at 350º for an hour, uncovered.

Tomato Gravy:

1. Mix 3 T of cornstarch in a small bowl. Slowly add water to make a paste. Add this mixture to the reserved tomato juice in a small saucepan. Salt to taste. Heat to thicken like a gravy.

2. Serve over meatloaf.

This is the meatloaf Mom always made. I don't particularly enjoy the gravy, but this meatloaf makes excellent sandwiches. I don't know where she got this recipe.
