2 # shredded potatoes
1 # bacon slices, cooked & crumbled
1 medium onion, chopped
1 green pepper, diced
1 ½ c shredded cheddar cheese
12 eggs
1 cup milk
½ t salt
½ t pepper

Directions:
Directions:
In a greased 5 quart slow cooker, layer ⅓ of each of the following: potatoes, bacon, onion, pepper and cheese. Repeat layers twice. In a large bowl beat eggs with milk and salt & pepper. Pour into slow cooker. Cover. Cook on high for 30 minutes. Reduce heat to low and cook for 3 ½ - 4 hours or until a thermometer reads 160º
