1 cup Oats *
1 cup Unprocessed Wheat Bran *
1 cup Flaxseed Meal *
-or-
*substitute 3 cups of any high fiber cereal (e.g., All Bran, Raisin Bran, etc.)

1 cup Water, boiling
1 can (15-16 ounce) Pumpkin
1 cup Buttermilk
2½ cups Flour
2½ teaspoons Baking Soda
2 Eggs, well-beaten
1 cup Sugar

Directions:
Directions:
Combine the cereal products with the boiling water. Stir and let cool.
Add all other ingredients to cereal mixture.
Place dollops of mix on a greased cookie sheet. Add chopped nuts, raisins, coconut or other toppings to top.
Bake at 350º for 20-25 minutes.

*Notes: Mixture can be covered and stored in the refrigerator for a couple weeks, making it easy to pop a couple in the oven as needed. For a less rustic look make "puffins" - grease a muffin tin, add batter, and toppings then bake.
