13.75 # pork
8.75 # beef
2 1/2 # pork fat
5 # water
2 1/2 # powdered milk
1/2 # salt
1 3/4 oz black or 1 oz white pepper
1 1/2 oz sugar
1 oz saltpeter
3/4 oz coriander
1/4 oz sweet paprika
1/4 oz ginger
1/4 oz cloves
Onions & garlic, optional

Directions:
Grind meat and mix with remaining ingredients. Mix until mixture binds together. Stuff in casings and tie in rings. Hang until casings dry. Smoke until light brown color. Cook at low temperature (250º) until internal temperature reaches 165º. Cool in ice water bath.
