1 prepared homemade noodle dough recipe
1/2 pound ground beef
1/3 cup minced onion
1 garlic clove, minced
1 egg
1/4 cup minced parsley
2 T grated Parmesan cheese
1/2 tsp salt

Directions:
Cut dough into 4 pieces. On well floured surface with well floured rolling pin, roll 1 piece into 15" x 6" rectangle; with sharp knife, cut rectangle crosswise into five 6" x 3" pieces.

Spread rounded tablespoonfuls of filling on 3 inch side of each piece of pasta to within 1/4 inch of edges. Fold dough over filling, bringing ends together. With fork dipped in flour, firmly press edges together. Place ravioli in single layer on floured, clean cloth towels. Repeat with remaining pasta and filling making 20 ravioli in all. Let dry 30 min.

In 8 qt saucepan over high heat, heat to boiling water salt and oil. Cook ravioli a few at a time, 10 min or until tender but firm; drain. Arrange on heated platter.

TO MAKE FILLING;
In 10" skillet over med-high heat, cook 1/2 lb beef, minced onion and garlic until meat is browned. Remove from heat. Spoon off juices. Stir in 1 egg, parsley, parmesan cheese and salt. Stir til well mixed.

Mom uses plain ol' Ragu spaghetti sauce, heated. And she always had grated parmesan cheese to add to the tops of ravioli.
