2 1/4 -2 1/2 cups flour
1/3 cup water
2 eggs
1 egg yolk
1 T olive oil
1 tsp salt

Directions:
Directions:
In large bowl, combine 1 cup flour and remaining ingredients. With mixer at low speed, beat 2 minutes, occasionally scraping bowl.
With wooden spoon, stir in enough additional flour to make a soft dough.
Turn dough onto lightly floured surface, knead until smooth and elastic, about 10 min. Cover dough in waxed paper and let rest 30 minutes.
Cut dough in half.
On floured surface with floured rolling pin, roll half of dough into 20" x 14" rectangle.
Lay out clean kitchen towels on table and lightly flour. Bring rolled dough to towel and spread out. You may need to roll out dough again. Cover with another towel and allow to dry. When noodles are dry but not brittle, cut into thin strips and fluff up and allow to dry some more. Mom would dry over night.
Add noodles to homemade chicken broth in large pot and cook about 12-15 minutes.
