1 Tbsp olive oil
1 small onion, diced
2 Granny Smith apples, peeled, cored, and diced
½ tsp salt
6 cups chicken broth
½ tsp white pepper
½ tsp ground sage
½ tsp dried thyme
¼ tsp ground nutmeg
2 cans (15oz) pumpkin
¼ cup brown sugar or 3 Tbsp maple syrup
½ cup heavy cream

Directions:
Directions:
1. Heat dutch oven or large soup pot over medium heat. Saute onion in olive oil until translucent. Add apples and salt and cook for 4 minutes.
2. Add broth and spices. bring to a boil until apples are very tender.
3. Add pumpkin and brown sugar (or syrup) and cook for 10-15 minutes over medium heat.
4. Using an immersion blender, blend until soup is smooth.
5. Add cream and heat over low temp until heated through.
6. Garnish with pumpkin seeds, dried apple slices, a bit of cream or syrup.

The spices can be varied in this recipe. For a more savory soup, add bay leaf, 1 tsp thyme and 1 Tbsp curry.
