2 cups flour
1 1/2 tsp. baking soda
1/2 tsp. salt
4 over ripe bananas
1 cup brown sugar
3/4 cup unsalted butter, melted and cooled
2 eggs
1tsp. pure vanilla
1/2 cup pecans, chopped

Directions:

Pre heat oven to 375º and lightly butter muffins tin.
In a large bowl, combine the flour, baking soda and salt. Set aside
Mash 2 bananas with a fork in a small bowl so they still have a bit of texture. With a electric beater whip the remaining two bananas and sugar together. Add the melted butter, eggs and vanilla beat well, scraping sides of the bowl.
Mix in the dry ingredients until just incorporated. Fold in nuts and the mashed bananas.
Fill the muffin tins until half full. Give a sharp tap so as to get out the bubbles.
Bake until a toothpick stuck in the middle comes out clean. 18 to 20 minutes
