2 lbs. beef stew meat or boneless lamb shoulder, cut into 1 inch pieces
1 Tbsp olive oil
˝ tsp salt
Freshly ground pepper to taste
1 large sweet onion, sliced
2 large carrots, peeled and cut in 1 inch chunks
1 large parsnip, peeled and cut in 1 inch chunks
3 large potatoes, peeled and quartered (red or Yukon gold)
1 cup leeks, coarsely chopped
4 cups beef broth, or more as needed
2 tsp thyme
2 tsp fresh rosemary, chopped (optional)
Fresh parsley for garnish

Directions:
Directions:
1. Heat oil over medium heat in large stockpot or dutch oven. Add lamb/beef, season with salt and pepper, and brown.
2. Add onion and sauté until translucent.
3. Add remaining ingredients. Cover and bring to a boil before turning the heat down too low. Simmer for 1 hour or more until meat is tender.
4. Serve garnished with parsley and side of crusty bread.
