1½ tbsp. lemon juice
2 tbsp. avocado oil
1 tsp. dijon mustard
Pepper to taste
½ cucumber diced
1 stalk of celery, chopped
8 oz. cooked salad shrimp
2 avocados, halved and pitted

Directions:

Combine lemon juice, oil, mustard and pepper. Add cucumbers, celery, and shrimp. Pile into avocado halves.
