1/3 c cornstarch
1 c Italian seasoned panko bread crumbs
1 small Eggplant cut 1/4 in sliced

Optional
sliced mozzarella
Lemon wedge
Marinara sauce

Dip in cornstarch with the salt the

Put 1/2 oil in skillet heat to 375
Fry for 1 min on each side
Then place on napkin and add optional if wanted
