Pierogi
2 cups flour
2 eggs beaten
1/2 tsp. salt
2 tbsp. Crisco (heaping tablespoons)
1/2 cup water

Filling
2 pounds of potatoes
1/2 peeled onion, minced
1 1/2 tbsp. butter
2 to 3 tbsp. cottage cheese

Directions:
Directions:
Mix flour, salt, Crisco, add beaten eggs and water. Mix until dough is elastic like, dough will be soft. Cover for 1/2 hour, let stand. Mix all ingredients for filling in bowl. Roll dough thin, cut round shapes with a glass and fill with 1 tbsp. of filling. Fold in half and pinch edges good. Drop in boiling water, until they float.
