1 10 oz. pkg. frozen riced cauliflower
1 T. soy sauce
2-3 T. olive oil
˝ c. chopped onion
2 minced garlic cloves
3 c. sliced mushrooms
2 c. spinach
soy sauce to taste

Directions:
Directions:
Cook cauliflower rice according to instructions on package. Heat olive oil in a skillet. Add onions and cook until soft. Toss in mushrooms, and sauté until cooked. Next, add garlic and stir. Mix in cauliflower rice and soy sauce. Stir until cauliflower rice has absorbed the soy sauce. Top mixture with spinach. Stir and cook until wilted.
