Vanilla
Sugar: 3/4 cup sugar
Flavoring: 1 t. vanilla

Coconut
Sugar: 3/4 cup sugar
Flavoring: 1 cup flaked coconut

Dark Chocolate
Sugar: 1 cup sugar
Flavoring: 3 ounces unsweetened chocolate

For all pies:
1/4 cup cornstarch
1/4 t. salt
3 cups milk
4 beaten egg yolks
3 T. butter
1 1/2 t. vanilla

One pie crust baked and cooled
Whip cream (optional)

In a large nonmetal mixing bowl stir together cornstarch, salt and sugar. Gradually stir in milk to make a smooth mixture. Micro-cook, uncovered, on high for 7-10 minutes or until mixture starts to boil, stirring every minute. Micro cook, uncovered, on high for 2 minutes more, stirring every minute,

Gradually stir about 1 cup of the hot mixture into the beaten egg yolks. Stir yolk mixture into the remaining hot mixture in the mixing bowl. Stir in flavoring. Micro-cook, uncovered, on high for 45-60 seconds or until just boiling. Stir in butter and vanilla. Turn into baked and cooled pie shell. Chill for several hours. Top with with whipped cream, if desired.
