10 small tortillas cut in half corn or flour tortillas work here
cooking spray
1 Tbsp. olive oil
1 pound ground beef (I use 93% lean)
2 Tbsp. taco seasoning
2 tsp. cayenne pepper (if you like it spicy)
salt and pepper to taste
1 15 oz. can pinto or black beans rinsed and drained
1 can fiesta corn
2 4 oz. cans diced chiles
2 cups red enchilada sauce
2 1/2 cups shredded cheddar cheese
2 tomatoes cored, seeded and diced (or 1 can diced tomatoes)
1/4 cup sliced green onions
1/4 cup sliced olives
Sour cream or plain Greek yogurt for garnish

1. Preheat oven to 350 degrees. Spray 2 quart casserole dish with cooking spray.

2. Heat oil in large pan over medium heat. Add the ground beef and cook for about 8 minutes. Add taco season, cayenne pepper (optional), salt and pepper, beans, fiesta corn and diced chiles.

3. Spread 1/4 cup enchilada sauce over bottom of casserole dish. Layer 1/3 of tortillas over the sauce. Add 1/2 of meat mixture and 3/4 cups of cheese on top of meat. Pour 1/2 cup of enchilada sauce over the cheese.

4. Repeat the process with 1/3 of the tortillas, rest of the meat mixture, 3/4 cup of cheese and 1/2 cup of sauce. add the final 1/3 of tortillas on top of casserole, pour the remaining sauce over the tortillas and sprinkle on the rest of cheese.

5. Cover the casserole with foil and bake for 30 minutes. Uncover and bake an additional 10 minutes until cheese is melted and brown.

6. Sprinkle tomatoes, green onion and olives over the top. Let casserole sit for 5 minutes before cutting.
