Ingredients: 4 cups diced, peeled, seeded fresh tomato (homegrown plum is best) about 3-4 # 1 med. Green Pepper, roasted, seeded & chopped, or 2 large roasted, seeded, and chopped Poblanos or both 1 large Onion, chopped 1 Jalapeņo, roasted, seeded and chopped 1/2 cup Tomato Paste 1/4 cup Vinegar 1T. Sugar 1 tsp. Salt 2 tsp. Garlic powder (roasted garlic best) or 2 cloves peeled, smashed fresh garlic 1/2 T. Cayenne( opt.) 4 T. chopped Cilantro I triple this to make 1 large batch.

Directions:We like peppers roasted but not necessary to recipe.
Combine tomatos, peppers, onion and garlic in large stock pot. Add other ingredients except cayenne and cilantro. Stir and bring to boil; then simmer about 45 minutes to thicken - stir often. Taste for for desired heat. We add way more roasted peppers and no cayenne. If heat is needed- add some hot pepper flakes or another jalapeņo.) Cool slightly and add cilantro. It may get hotter as it cools. Freeze in 2 cup airtight containers or jars. You can also can this in cup or pint size jars- Pour hot salsa into hot sterilized jars and add lids and rings. Place in canner filled with boiling water to cover by 1 inch and boil 20-25 minutes-for cup or pint size jars. |

Notes: 2023 - 10# romas, (14.5 cups) roasted peppers (3 green), poblanos(4 small), anaheim(2 mild), jalepenos (1) , 3 cups onion, 10 roasted garlic made 17 cups. It was mild to medium heat.
