1 lb dry kidney beans
1/4 pound dry black beans
6 Strips of bacon, chopped
1 large Red or white onion chopped
1 Red or green bell pepper seeded and chopped
2 Pounds Ground Beef
4-6 cloves garlic, minced
1 Tablespoon Dried oregano
2 Tablespoons ground cumin
1.5 teaspoons salt
1 Tablespoon ground black pepper
1 Tablespoons Smoked Paprika
2 Tablespoons cocoa powder
2 Tablespoons chili powder
1 Can 15 ounces Fire Roasted diced tomatoes with juice
1 Can 6 ounce Tomato paste
˝ Cup beef broth
1 11.2 oz bottle Guiness
1 Tablespoon Worcestershire sauce

Sort and rinse beans
Dissolve 3 Tablespoons of salt in 4 quarts of water, add the beans and soak overnight (8 hours)
Drain and rinse beans.
Place the beans in the instant pot and cover with water. Water should be an inch above the beans
Set manual pressure to high and set timer to 7 minutes
Allow 10 minutes natural release then release pressure
Drain the beans and set aside.
Wash out the inner pot and return to Instant Pot


Turn your Instant Pot to sauté and when hot, add the bacon.
Cook until crisp, stirring often to cook evenly.
Remove the bacon to a paper towel lined plate.
Add the onions and peppers and cook until tender.
Add the meat and cook until browned.
Drain off any excess grease; tilt the pot and use a large spoon.
Add the minced garlic and stir into the beef for about 30 seconds.
Add the oregano, cumin, salt, pepper, smoked paprika, and chili powder; stir into the beef mixture for about 30 seconds.
Add the beans and all of the remaining ingredients and the bacon and stir to combine.
Turn the instant pot to chili (if you don't have a "chili" setting, use the "manual" setting) and cook for 18-20 minutes*. Allow pressure to release for 10-15 minutes then quick release with the vent.
