4 Eggs
1 2/3 Cups of Sugar
1 Cup of Vegetable Oil
1-15 oz Can of Pumpkin Puree
2 Cups of Flour
2 t of Baking Powder
1 t of Baking Soda
2 t of Cinnamon
1 t of Salt
1-3 oz Package of Philadelphia Cream Cheese
1/2 Cup of Butter, Softened
1 t Vanilla Extract
2 Cups of Powdered Sugar

Directions:
Directions:
In a medium bowl, mix the eggs, sugar, oil, and pumpkin until light and fluffy. Mix together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.
Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.

To make the frosting, cream together the cream cheese and butter in a mixer. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

Full Disclosure. This is NOT mom's pumpkin bar recipe. She never wrote it down for me. However, after many years of trying different recipes found online, this recipe is the closest thing I've come to it.
