3/4 c sweetener
3/4 c butter, softened
1 Tbsp blackstrap molasses
1 tsp vanilla
1/2+ tsp pineapple extract
4 large eggs
2 1/2 c almond flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
2 1/2 c grated carrot
1 1/2 c pecans

Line and grease two 9" cake pans
In large bowl, cream together butter and sweeetener until fluffy.
Beat in molasses and flavorings.
Beat in eggs, one at a time.
In another bowl, mix dry ingredients.
Stir them into wet ingredients.
Stir in carrots and pecans
Spread in prepared pans.
Bake 30-35 minutes, until top is springy.
Cool 10 minutes before removing cake to cooling rack.
