2 pkg dry yeast
2 1/2 cup water
3 tsp salt
7 cups flour
2 beaten egg whites

For Half recipe 12 rolls:
1 pkg dry yeast
1 1/4 cup water
1 1/2 tsp salt
3 1/2 - 3 3/4 cup flour
1 slightly beaten egg white

Directions:
Directions:
Soften yeast in warm water. Add 3 cups flour and beat well. Add salt. Stir in about 3 1/2 cup flour--dough should be stiffer than for ordinary bread---turn out on floured surface--cover. Rest 10 minutes. Knead till very elastic, 10-15 min kneading in remaining flour. Place in greased bowl, turning once to grease surface.--Cover and let rise till double. Punch down. Rise again. Turn out on floured surface. Cover and let rest 10 minutes.

Divide dough 24 portions--Place on cookie sheet covered with corn meal. (I think she greased the cookie sheet before adding corn meal).

Add 1 T water to egg whites. Brush tops and sides of rolls--Cover with damp cloth don't let it touch the dough. Rise til doubled. Heat oven to 400º.

Place large shallow pan filled with boiling water on lower shelf of oven. Add rolls above and bake til slightly brown, 15 min. Brush with egg whites and bake 10-15 min longer. Makes about 24 rolls.
