1 ¼ cups graham crackers- crusted
⅓ cup butter- melted
⅓ cup sugar

Middle
8 ounces cream cheese softened
½ cup powdered sugar
8 ounce container of Cool Whip

Top
¾ cup sugar
3 Tablespoons cornstarch
⅛ teaspoon salt
¼ cup cold water
5 cups fresh blueberries
1 Tablespoon butter
1 Tablespoon lemon juice

Directions:
Directions:
Start with the blueberry layer. In a sauce pan combine sugar, cornstarch, and salt. Slowly add cold water. Add 3 cups blueberries and bring to a boil. Continue cooking for 2 minutes or until the mixture becomes thick and bubbly. Remove from heat and add butter, lemon juice, and 2 cups blueberries. Stir and cool.
Next make the crust by finely crushing 1 package of graham crackers. Add sugar and mix. Place in a 9x13 pan and pour melted butter over top. Mix and flatten out to make crust.
Now make the middle layer. Beat cream cheese and powdered sugar until smooth. Stir in cool whip and place on top of the crust. When blueberries are cooled. Add to the top.

Grandma used to make this with strawberries or cherries. You can used canned pie filling for cherries, or follow the strawberry pie recipe for strawberries. Another variation was to use pretzels instead of graham crackers for the crust when making Strawberry Delight.
