3 T oleo
2 T flour
3 cup milk
1 tsp salt
1/4 tsp. pepper
2 T chopped onion-optional
6 potatoes

Directions:
Directions:
Peel and slice potatoes thin. Put half in dish.
Melt oleo (butter) in saucepan on med. heat and add flour, salt and pepper. When flour is absorbed in the butter, add milk slowly, stirring constantly. Cook over low heat until thick and bubbly. Pour half over sliced potatoes in baking dish, add remaining potatoes and then the rest of the sauce.

Can also add some shredded cheese to sauce mixture, if you want.

Bake, covered, at 325º for 1 hour until soft
