1¾ c. flour
⅓ c. brown sugar
2 tsp. baking powder
1½ tsp. cinnamon
¾ tsp. soda
¼ tsp. salt
½ c. sour cream
½ c. milk
¼ c. butter, melted
1 egg
2 c. shredded carrots
¼ c. apple jelly, melted (reserve)

Heat oven to 375º. Combine dry ingredients and set aside. Combine remaining ingredients except carrots in large bowl. Stir with whisk till smooth. Stir in dry ingredients. Mix well. Stir in carrots. (Batter will be thick./ Spoon in 12 paper-lined muffin cups. Bake 25-30 minutes. Brush with melted jelly. Cool 5 minutes before removing from pans.
